Kiss The Cook: Lemon Coconut Bunny Tails

Ingredients

· 2/3 cup lemon juice

· 2 tablespoon chia seeds

· 1 ½ cups quick oatmeal

· ½ cup unsweetened flaked coconut

· ¼ cup honey

Instructions

1. In a medium bowl, combine ingredients, in the order given, stirring after each addition.

2. Allow to sit 10 minutes.

3. Shape into balls of approximately 1 inch, roll each one in some more coconut to coat, and place on parchment paper or a platter.

4. Refrigerate for 45 minutes or so to firm up before eating.
