Pomegranate and Dark Chocolate Bites

Ingredients

·  2 ½ cups pomegranate seeds

·  6 oz. dark chocolate chips

·  1 teaspoon sea salt

Instructions

1. Place chocolate in a bowl; microwave on high for about 1 minute; stir.  Repeat heat at shorter intervals of 15-  20 seconds, stirring in between, until the chocolate is completely melted and has a smooth consistency.

2. Into the melted chocolate, slowly stir in the pomegranate seeds. 

3. Line a cookie sheet with parchment paper.  Using a small spoon, place spoonfuls of chocolate pomegranate seeds onto cookie sheet. 

4. Finish with a pinch of salt on each bite.

5. Refrigerate for at least one hour before serving.  After removing  from the fridge, serve immediately.

Marinated Mozzarella, Prosciutto, & Tomato Bites

Ingredients

·   24 Mini marinated mozzarella balls

·   24 small slices of prosciutto

·   24 cherry tomatoes

·   24 toothpicks

Instructions

1. Fold the prosciutto in half and half again; thread onto the toothpick.

2. Thread the mozzarella ball and then the tomato.

3. Repeat and enjoy!
