Slow Cooker Mashed Potatoes
Ingredients
· 2 pounds red potatoes, cut into 2 inch pieces
· ½ cup plain Greek yogurt
· ¼ cup milk
· 2 teaspoons minced garlic
· 2 teaspoons salt
· 1 teaspoon black pepper
· Optional: chopped, cooked bacon; sliced green onions
Instructions
1. Spray the inside of a slow cooker with cooking spray. Add chopped potatoes. Cover and cook 2-3 hours on high or 5-6 hours on low.
2. Add sour cream, milk, garlic, salt, and pepper to potatoes.
3. Mash with a potato masher or use a hand mixer to blend together all ingredients. Add more salt if desired. Top with bacon and green onions.
