Last week, a building permit was requested for the construction of a new restaurant in Lubbock called the Lost Cajun.
The company website said a Lubbock location was coming soon to the 6800 block of Milwaukee Avenue. The building permit was for 2,847 square feet with an estimated cost of $367,000.
The Lost Cajun has locations in Colorado, South Carolina, Tennessee, and Texas.
The company website tells the story of how Barry wanted to know if there was room for more locations of the Lost Cajun.
“When Barry arrived, it was like a hurricane from the Gulf of Mexico, full of energy, totally encompassing and a bit overwhelming,” the website said.
Barry, last name not given, lives in San Antonio and has more than 30 years of experience in the food service brokerage business.
“We decided that Barry would make a great Lost Cajun,” the website said. And so a Lubbock location is in the works.
The company brags about beignets and gumbo. The company said that an opening date was not finalized yet, but late spring or early summer was possible.
The company founder, Raymond Griffin, has been quoted as saying, “Our seafood is like none that you have ever tasted and the Beignets are just like the ones you get in New Orleans.”
