Living with diabetes doesn’t mean you have to live your life feeling deprived of the foods you once loved to eat. On the contrary, you can eat the same foods you love, just maybe not as much. You can find substitutes that allow you eat the food that you love all while keeping your numbers normal.
Many people think that living with diabetes means that you can’t enjoy the sweet treats, but with a little planning and reducing you portion size, you can have your favorite desserts while managing your diabetes. We asked a local diabetes educator and dietitian to show us some of the ways that you can enjoy a sweet treat by substituting a few ingredients.
Dietitian, Kelli Paschall, created a Summer Strawberry Delight that includes angel food cake and fruit. It is quick and easy to make. Here is the recipe.
Summer Strawberry Delight
1 angel food cake loaf
2 small nonfat strawberry yogurt
8 oz Cool Whip Lite
2 cups strawberries, sliced
4 kiwis, sliced
2 Tbsp almonds, toasted
Mix yogurt and Cool Whip.
In an 8x8x2 dish, tear ½ of cake into bite-sized pieces.
Pour½ of yogurt mixture on top, then ½ of strawberries, then ½ of kiwi.
Repeat layers.
Sprinkle top with toasted almonds
