We continue making Super Bowl appetizers with United dietitian, Karleigh Jurek. She shows us how to make an Italian appetizer and easy caprese skewers with a balsamic reduction drizzle. Here are the recipes to try yourself.

ANTIPASTO SKEWERS RECIPE – ITALIAN APPETIZER

INGREDIENTS

  • 4 sweet banana wax peppers, cut in half

  • 8 golden pepperocini

  • 8 artichoke hearts

  • 8 black olives

  • 8 marinated cherry tomatoes

  • 8 marinated fresh mozzarella balls (Bocconcini or Ciliegine)

  • 8 cheddar cheese chunks

  • 8 slices of genoa salami

  • 8 slices of prosciutto

  • 8 skewers

INSTRUCTIONS

  1. Take a skewer in hand. Slide one of each ingredient onto the skewer. Repeat until all skewers are full. Refrigerate until ready to serve.

EASY CAPRESE SKEWERS WITH A BALSAMIC REDUCTION DRIZZLE

INGREDIENTS

  • cherry tomatoes

  • fresh mozzarella, cut into cubes (I used Bel Gioioso brand)

  • fresh basil leaves

  • 1 cup good balsamic vinegar

  • wooden skewers

INSTRUCTIONS

  1. Thread cherry tomatoes, mozzarella cubes, and basil leaves onto skewers, repeating until the skewer is filled. Repeat until you get the amount of skewers you want.

  2. Place balsamic vinegar in a small saucepan. Bring to a simmer on medium-heat and then turn down heat to a low simmer. It will take about 10 minutes to thicken and reduce. Keep a close eye on it so it doesn’t burn. When it coats a spoon, it’s finished.

  3. Take off heat and let cool for a few minutes. Drizzle over the skewers and serve. Enjoy!
