Karleigh Jurek joins us on the show to make Super Bowl recipes. She shows us how to make Guacamole with Hidden Green Veggies and Strawberry Tomato Salsa.

Guacamole with Hidden Green Veggies

Ingredients:

Hidden Green Puree

2 cups spinach leaves

2 cups broccoli florets, fresh or frozen

1 cup sweet green peas, frozen

2 tbsp water or vegetable broth

Guacamole – homemade or get our fresh prepared Market Street guacamole

Instructions

1.       Steam spinach and broccoli in microwave or stovetop. Add the peas in the last 2 minutes. Drain.

2.       Combine the veggies into a food processor or blender and puree with about 2 tablespoons of water or vegetable broth. Continue until smooth as possible.

3. Stir as much as green puree into your guacamole as you think you and your family would like.

Strawberry Tomato Salsa

Ingredients

6 Tbsp. Olive Oil

2 Tbsp. Balsamic Vinegar

½ tsp. Salt

2 cups Strawberries, coarsely chopped

2 cups Cherry Tomatoes, chopped

½ cup Cilantro

Instructions

1. Dressing: Whisk together Olive Oil, Balsamic Vinegar and Salt.

2. Chop up Strawberries, Tomatoes and Cilantro.

3. Mix ingredients together, serve and enjoy!

Recipe makes 12 servings
