The folks at Evie Mae’s Barbecue know a few things about making popular barbecue, so who better to ask for advice on grilling the perfect brisket or sausage?

Arnis Robbins, one of the owners of Evie Mae’s Pit Barbecue, said the majority of the work put in to making great barbeque is patience.

“It’s a lot of hard work, it’s really really hot out here but everyday’s a challenge, everything changes and we learn to to deal with different variables,” Robbins said. “I think that’s part of the fun, is that everyday’s a new challenge, and our goal everyday is to figure out how to take these variables and end up with same consistent product that we had yesterday.”

Robbins also said those new to grilling should take notes when they cook on the grill, and compare outcomes to see how they prefer the finished product. He also said being familiar with your specific grill is important. 

Evie Mae’s Pit Barbecue is located at 217 US-62 in Wolfforth. They are open Wednesday though Saturday from 11 a. m. to 4:30 p. m. or until they run out of product.
